How did I go this long without posting a waffle recipe? After all, my blog is called Wake Up to Waffles. I love to wake my family up to waffles. I have such great memories of when I was little and my dad would make waffles. One of the best feelings I ever had was smelling those waffles and sitting down to eat a whole plate-full with fresh blueberries and applesauce.
What’s better than apple pie for breakfast? Healthy apple pie waffles, that’s what! Apples have been my newest obsession when it comes to breakfast. For the longest time, I avoided cooked apples, but now I can’t live without it. I put them on peanut butter toast, in cookies and muffins and I especially like it in oatmeal.
This recipe took a few tries to master. I tried making them without eggs, but they turned out crumbly and burned. When I added more oatmeal, they tasted raw and chewy. I finally mastered it when I added an egg, to hold them together, maple syrup, to make them sweet and applesauce to make them soft. Maple syrup and pecans were the perfect way to top it off. These delicious waffles are perfectly:

If you like waffles and apples, you’ll absolutely melt when you try these! Enjoy!
- For Topping:
- 2 medium crisp apples (I used Honeycrisp)
- 2 teaspoons coconut oil
- 1 Tablespoon pure maple syrup
- 1 teaspoon ground cinnamon
- For Waffles:
- 1 cup whole wheat flour
- ¼ cup rolled oats or old-fashioned oats
- 2 teaspoons baking powder
- Pinch of salt
- ¼ teaspoon ground cinnamon (optional)
- 1 large egg
- ½ cup unsweetened almond milk
- ¼ cup unsweetened applesauce
- 1 Tablespoon pure maple syrup
- 1 teaspoon pure vanilla extract
- 1 Tablespoon coconut oil, melted
- Preheat oven to 250 degrees F. and place a parchment lined cookie sheet in the middle rack of the oven.
- Cut 1½ apples into medium slices. Separately, cut ½ apple into very small pieces. In a medium-large bowl, toss apple slices in maple syrup and cinnamon.
- In a medium saucepan, heat coconut oil over medium-low heat. Sautee apple slices until coconut oil starts to sizzle, then turn heat down to low and stir every 1-2 minutes until apples are cooked through. (It took me 15 minutes.) Remove from heat, cover and set aside.
- Preheat waffle iron.
- In a large bowl, whisk together dry ingredients.
- In a small bowl, whisk egg. Add to batter.
- Pour in wet ingredients and stir until combined.
- In a small, heat-safe bowl, melt coconut oil in the microwave or the preheated oven. Pour into batter and stir well.
- Fold in uncooked apple pieces.
- Grease waffle iron generously with olive oil.
- Pour ⅓ batter in at a time and cook as long as your waffle iron suggests (about 2-4 minutes.)
- Once each waffle is done, place it on the cookie sheet in the oven.
- Once all are cooked, re-heat sautéed apples over low-medium heat.
- Serve warm with sautéed apples on top, maple syrup and pecans.
To make your waffles sweeter, add another Tablespoon of maple syrup.
