I’ve never done a recipe quite like this one. I’m hoping to incorporate more comfort food and meal planning recipes into the blog. This recipe was such a massive success and I can’t wait to hear what you think.
This lasagna is seriously SO good! It’s a cheesy one for sure, so if you’re a cheese lover like me, there’s no doubt you’ll love this recipe. The best part is that it’s perfect for meal planning. I was able to eat prepped meals all week long thanks to this recipe.
What I love about pasta dishes like this one is that you can easily customize the ingredients. The recipe calls for onions and garlic, but you could easily throw some mushrooms, broccoli, zucchini, or all of the above.

- ½ red onion, chopped
- 3 cloves garlic, minced
- 3½ cups ricotta cheese
- 4 cups mozzarella cheese
- 1 cup grated parmesan cheese
- 1½ Tblsp dried parsley
- 7-10 fresh basil leaves, thinly sliced + more for topping
- 1 egg, beaten
- ½ tsp salt
- ½ tsp black pepper
- Olive oil
- 4 cups marinara sauce
- 1 (16oz) box lasagna noodles
- Preheat oven to 350 degrees F. and lightly grease a 9" by 13' baking dish with olive oil. Set aside.
- In a large pot, cook lasagna noodles as instructed on the box. (Each brand will provide different instructions). Then drain and set aside.
- Meanwhile, chop onion and mince garlic. Heat 2 teaspoons olive oil in a frying pan over medium heat. Sautee onions and garlic stirring frequently until golden brown, then remove from heat.
- In a large mixing bowl, stir together ricotta, 2½ cups mozzarella, ½ cup parmesan, dried parsley, and basil. Add egg and stir until thoroughly combined. Stir in sauteed onions and garlic, salt, and pepper.
- In the greased baking dish, evenly spread 1½ cups marinara sauce on the bottom.
- Place lasagna noodles lengthwise to cover the entire surface of the baking dish, then place another noodle covering the remaining space.
- Scoop ½ the cheese mixture over the noodles and spread evenly with a rubber spatula or large spoon.
- Evenly sprinkle mozzarella over the top.
- Using a spoon, scoop marinara sauce over the top to create a thin layer of sauce.
- Top with another layer of noodles.
- Scoop remaining cheese mixture over the top and spread evenly.
- Sprinkle another thin layer of mozzarella cheese over the top.
- Spread another thin layer of marinara sauce over the top.
- Top with another layer of noodles.
- Spread remaining marinara sauce on top of the noodles. Be sure to cover the entire surface with sauce.
- Sprinkle remaining mozzarella and parmesan over the top.
- Cover baking dish with tin foil and bake for 35 minutes.
- Remove foil and bake for another 10 minutes.
- Let cool a few minutes before serving. Top with thinly sliced basil. Store in an airtight container or in the baking dish covered in tin foil in the refrigerator.
