It’s official. My first year of college is over. I made it out alive. Surprisingly. It was a long, fun-filled, stressful, crazy 2 semesters and I cannot wait for summer.
First, I have to find a great summer job. I’m hoping to find a job at an ice cream shop or coffee shop near my house.
I am insanely excited to be able to use a kitchen everyday. That might be what I miss most. Other than my dogs and parents, of course. But for real, making oatmeal in a pan instead of the microwave will be so satisfying.
Chunky Monkey Oatmeal

Ingredients
- ½ cup rolled oats
- 1 cup unsweetened almond milk
- 1 ripe banana
- 1 Tablespoon dark chocolate chips
- 1 Tablespoon natural peanut butter
- 3 Tablespoons walnuts
Instructions
- Combine oats and almond milk in a frying pan over medium heat.
- Mash ½ banana and add to pan. Stir to combine.
- Bring to a boil, then reduce heat to medium-low. Continue stirring as needed.
- Cook until oats are fully cooked.
- Transfer to bowl and top with sliced banana, chocolate chips, peanut butter and walnuts.
