It’s been an eventful couple of weeks, so I apologize for not posting last week. I do think this recipe will make up for it, though. This really is an essential one.
I could make this granola everyday. It’s tough not to eat the whole batch before it leaves the pan. It’s that good.
This granola has such a great roasted taste, as well as a ton of natural sweetness. The maple syrup makes the oats crispy, nutty, and sweet.
Coconut Almond Granola

Ingredients
- 1 cup rolled oats
- ⅓ cup coconut flakes
- ⅓ cup almonds
- ¼ teaspoon salt
- 2 Tablespoons coconut oil, melted
- ¼ cup maple syrup or honey
- ½ teaspoons vanilla extract
Instructions
- Preheat oven to 325 degrees F. and line a baking sheet with parchment paper.
- In a medium mixing bowl, combine all ingredients.
- Spread out evenly on parchment-lined baking sheet.
- Bake 20 minutes, stir, then bake another 5-10 minutes, until desired crispiness.
