My first year of college is almost over. It’s hard to wrap my head around, but pretty soon I’ll be working full-time, running around the lake every day, and best of all cooking my own food in an actual kitchen! Woo hoo!
I miss having a kitchen so much. It will be such a relief to not have to eat in the cafeteria every day. Honestly, it is getting to be unbearable. I miss making a fresh salad and heating up my own veggie burgers in olive oil.
The only good meal in college for me is breakfast. I am lucky enough to have a Ninja blender, so I make a smoothie almost every morning. Either a smoothie or instant oatmeal with banana and peanut butter.
This recipe is a go-to for me, when I’m lucky enough to get kale from Target. It’s not ideal, but sometimes a girl really needs some kale. Ya know?
- 1 cup orange juice
- 1 frozen sliced banana
- ½ avocado
- 1 huge handful baby kale
- 1 Tablespoon chia seeds
