It’s almost painful to post this recipe because I was only able to eat one slice before the rest of the fam ate it all haha. Now I’m craving banana bread. If you have access to an oven (not all of us do) then do yourself a favor and make this recipe! I wish I could.
This banana bread is fluffy and moist, everything banana bread should be. I always debate whether I should experiment with ingredients other than chocolate chips when making banana bread, but I always find myself sticking with the usual. Why mess with what’s already perfect, right?
I almost always use whole wheat or oat flour in recipes. I’ve always been against using all-purpose flour, but not anymore. I’m trying to be more open to all ingredients, even the ones that have been labeled as “unhealthy” by the health foods industry. Recently I’ve started practicing intuitive eating and I think that being accepting to a wider variety of foods can be extremely freeing. I truly think that using AP flour makes all the difference, at least for this recipe specifically. Many recipes still taste great using whole wheat, almond, or coconut flour, but this is one that wouldn’t be nearly as perfectly fluffy without AP flour.

- 3 ripe bananas, mashed
- ⅓ cup coconut oil, melted
- 1 tsp vanilla extract
- 1 egg, beaten
- ½ cup coconut sugar (or substitute cane sugar)
- 1 and ½ cup all purpose flour
- ¼ tsp baking soda
- ½ cup chocolate chips
- Preheat oven to 350 degrees F and grease a loaf pan with olive oil or non-stick spray.
- In a large mixing bowl, mash bananas.
- Melt coconut oil and add to bowl. Mix until combined.
- Add egg and mix until combined.
- Stir in coconut sugar, flour, and baking soda. Mix until no clumps remain.
- Stir in chocolate chips.
- Pour batter into greased loaf pan and top with more chocolate chips.
- Bake for 45-50 minutes, or until golden brown around the edges. Insert a knife into the center of the banana bread and if it comes out clean, it's ready.
- Let cool, then slice and serve warm!
