Orange Blueberry Waffles

Serves: 8 waffles
- 2 cups whole wheat or oat flour
- ⅓ cup coconut sugar
- 2 teaspoons baking powder
- ¾ teaspoon salt
- zest of 1 orange
- 1 and ¼ cup unsweetened almond milk
- ½ cup pulp-free orange juice
- ½ teaspoon vanilla extract
- 2 eggs
- ¼ cup melted coconut oil
- 1 cup fresh blueberries, rinsed
- Preheat waffle iron.
- In a large mixing bowl, whisk all dry ingredients together.
- Zest orange and stir into dry ingredients.
- Pour almond milk, orange juice, and vanilla extract into mixing bowl and stir until combined.
- Add eggs and melted coconut oil and whisk into batter.
- Add blueberries and gently stir.
- Grease waffle iron with olive oil.
- Pour ⅓-1/2 cup batter into center of preheated waffle iron and cook according to the iron's instructions.
- Serve warm with honey or pure maple syrup.
