Vegan Peanut Butter Banana Bread

Serves: 10 slices
- 3 ripe bananas, mashed
- ½ cup creamy natural peanut butter
- ½ cup coconut sugar
- ¼ cup unsweetened almond milk
- 1 teaspoon vanilla extract
- 1 and ½ cups whole wheat flour or oat flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- Preheat oven to 350 degrees F. and grease a loaf pan with olive oil and set aside.
- In a large mixing bowl, mash bananas.
- Add peanut butter, coconut sugar, almond milk, and vanilla. Stir to combine.
- Add flour, baking soda, and salt. Stir to combine.
- Pour into greased loaf pan.
- Bake for 45-50 minutes.
- Let cool, then remove from pan and serve.
