Mocha Banana Bread

- 3 ripe bananas, mashed
- 2 egg whites
- ¾ cup agave nectar (or honey)
- ¼ cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1 and ½ cup oat flour
- ⅓ cup unsweetened cocoa powder
- 1 Tablespoon instant espresso powder
- ¾ teaspoon baking powder
- ¾ teaspoon baking soda
- pinch of salt
- ¼-1/3 cup chopped dark chocolate or dark chocolate chips
- Preheat the oven to 350 degrees F.
- Grease a loaf pan and set aside.
- In a large mixing bowl, mash bananas.
- Add egg whites and whisk together with bananas.
- Add agave, melted coconut oil, and vanilla. Whisk together.
- Stir in oat flour.
- Stir in all remaining ingredients.
- Pour batter into greased loaf pan.
- Bake for 50-55 minutes.
