Ingredients
  • 3 ripe bananas, mashed
  • 2 egg whites
  • ¾ cup agave nectar (or honey)
  • ¼ cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 and ½ cup oat flour
  • ⅓ cup unsweetened cocoa powder
  • 1 Tablespoon instant espresso powder
  • ¾ teaspoon baking powder
  • ¾ teaspoon baking soda
  • pinch of salt
  • ¼-1/3 cup chopped dark chocolate or dark chocolate chips
Instructions
  1. Preheat the oven to 350 degrees F.
  2. Grease a loaf pan and set aside.
  3. In a large mixing bowl, mash bananas.
  4. Add egg whites and whisk together with bananas.
  5. Add agave, melted coconut oil, and vanilla. Whisk together.
  6. Stir in oat flour.
  7. Stir in all remaining ingredients.
  8. Pour batter into greased loaf pan.
  9. Bake for 50-55 minutes.
