Vegan Hemp Protein Pancakes

Serves: 2 servings (about 6 medium-small pancakes)
Ingredients
  • ½ cup almond milk
  • 1 and ½ Tablespoons ground flaxseed
  • 1 Tablespoon pure maple syrup
  • ¼ cup hemp protein powder
  • ¼ cup oat flour
  • ¼ teaspoon baking powder
  • pinch of salt
  • 1 Tablespoon coconut oil, melted
Instructions
  1. In a medium mixing bowl, whisk together almond milk, flaxseed, and maple syrup.
  2. Stir in protein powder.
  3. stir in oat flour, baking powder, and salt, until there are no clumps.
  4. Melt coconut oil in the microwave or on the stovetop.
  5. Pour coconut oil into batter.
  6. Heat some oil in a medium pan over medium-low heat.
  7. Pour ¼-1/3 cup batter into pan.
  8. When bubbles start to form in the center of the batter, flip pancake.
  9. Once other side is cooked through (should only take 20-30 seconds) then the pancake is ready. Add to a plate.
  10. Repeat with remaining batter.
  11. Serve with desired toppings. (I like to eat these with melted dark chocolate and fruit.)
