Vegan Banana Nut Muffins

Light, fluffy, not too sweet, but just sweet enough! These muffins pair perfectly with a latte or tea.

Ingredients
  • 1 and ½ cup all purpose flour (or sub oat flour)
  • ¾ cup coconut sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup mashed ripe banana (roughly one large banana)
  • ½ cup coconut oil, melted
  • 1 Tablespoon flaxseed meal
  • ½ cup oat milk or soy milk
  • ½ cup walnuts
Instructions
  1. Preheat the oven to 350 F.
  2. Line a muffin tin with muffin liners, or grease with non-stick cooking spray.
  3. In a large mixing bowl, combine flour, coconut sugar, baking powder, baking soda, and salt.
  4. In another bowl, mash banana and measure 1 cup.
  5. Melt coconut oil and mix with banana. Add flaxseed meal and milk.
  6. Pour into dry mixture and stir to combine.
  7. Fold in walnuts, leaving a few for topping.
  8. Scoop batter into muffin cups ¾ full. Top with more walnuts.
  9. Bake for 22-26 minutes, or until firm.
  10. Let cool and serve with coffee.
