Preheat oven to 350 degrees F and grease a loaf pan with olive oil or non-stick spray.
In a large mixing bowl, mash bananas.
Melt coconut oil and add to bowl. Mix until combined.
Add egg and mix until combined.
Stir in coconut sugar, flour, and baking soda. Mix until no clumps remain.
Stir in chocolate chips.
Pour batter into greased loaf pan and top with more chocolate chips.
Bake for 45-50 minutes, or until golden brown around the edges. Insert a knife into the center of the banana bread and if it comes out clean, it's ready.
Let cool, then slice and serve warm!
