Dark Chocolate Sea Salt Granola

Serves: About 2½ cups
- 2 and ½ cups rolled oats
- ¾ cup walnuts
- 1 Tablespoon chia seeds (optional)
- 1 Tablespoon coconut sugar
- 1 teaspoon coarse sea salt
- ¼ cup coconut oil, melted
- ¼ cup unsweetened cocoa powder
- ⅓ cup maple syrup
- ⅓ - ½ cup chopped dark chocolate or chocolate chips
- Preheat oven to 350 degrees F. and line a large baking sheet with parchment paper or silicone mat.
- In a large mixing bowl, combine rolled oats, walnuts, chia seeds, coconut sugar, and sea salt.
- In a medium heat-safe bowl, melt coconut oil in the microwave or oven.
- Add cocoa powder and maple syrup to coconut oil. Stir until thoroughly combined.
- Pour melted chocolate mixture over dry ingredients and stir until evenly distributed.
- Spread evenly over baking sheet. Bake for 20-25 minutes, or until desired crispiness. (Any more than 28 minutes will burn the granola.)
- Let cool, then add chocolate chunks and transfer into a sealed jar or container. Store at room temperature for up to 8 days.
