Dark Chocolate Sea Salt Granola

Ingredients
  • 2 and ½ cups rolled oats
  • ¾ cup walnuts
  • 1 Tablespoon chia seeds (optional)
  • 1 Tablespoon coconut sugar
  • 1 teaspoon coarse sea salt
  • ¼ cup coconut oil, melted
  • ¼ cup unsweetened cocoa powder
  • ⅓ cup maple syrup
  • ⅓ - ½ cup chopped dark chocolate or chocolate chips
Instructions
  1. Preheat oven to 350 degrees F. and line a large baking sheet with parchment paper or silicone mat.
  2. In a large mixing bowl, combine rolled oats, walnuts, chia seeds, coconut sugar, and sea salt.
  3. In a medium heat-safe bowl, melt coconut oil in the microwave or oven.
  4. Add cocoa powder and maple syrup to coconut oil. Stir until thoroughly combined.
  5. Pour melted chocolate mixture over dry ingredients and stir until evenly distributed.
  6. Spread evenly over baking sheet. Bake for 20-25 minutes, or until desired crispiness. (Any more than 28 minutes will burn the granola.)
  7. Let cool, then add chocolate chunks and transfer into a sealed jar or container. Store at room temperature for up to 8 days.
