Peanut Butter Chocolate Chip Oatmeal Bars

Ingredients
  • ½ cup natural peanut butter
  • 1 teaspoon pure vanilla extract
  • 1 large egg, beaten
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup whole wheat flour
  • 1½ cup rolled oats
  • 1¼ cup coconut sugar
  • ½ cup coconut oil, melted
  • 3 Tablespoons almond milk
  • ½-2/3 cup semisweet chocolate chips
Instructions
  1. Preheat oven to 350 degrees F. and grease an 8x8 baking pan with olive oil or non-stick spray.
  2. In a large bowl, whisk together peanut butter, vanilla extract and egg.
  3. Add each dry ingredient, stirring in between each addition.
  4. Melt coconut oil in the preheated oven and stir into batter.
  5. Stir in almond milk.
  6. Fold in chocolate chips.
  7. Transfer batter to greased pan and bake for10 minutes, or until golden brown.
  8. Let cool completely and save in an airtight container in room temperature.
