These delicious bars are chewy, naturally-sweetened, perfectly salted, and has a smooth dark chocolate filling.

Ingredients
Oat Layer:
4 Medjool dates, pitted
1½ cup oats (rolled oats or instant oats)
1½ cup pecans
½ cup coconut oil, melted
2 Tablespoons honey
¼ cup almond butter
¼ teaspoon sea salt
Chocolate Layer:
¼ cup coconut oil, melted
½ cup unsweetened cocoa powder
¼ cup honey
sea salt
Instructions
Line a loaf pan with parchment paper. Set aside.
For the oat layer: Add all oat layer ingredients to a food processor.
Pulse until crumbly texture, then blend until the texture holds together well. Scrape sides as needed.
Set aside ½ cup of the oat mixture in a bowl.
Evenly press remaining mixture into the lined loaf pan.
For the chocolate layer: Melt coconut oil. Gently stir in cocoa powder and honey until smooth.
Pour chocolate mixture into the loaf pan over the oat mixture. Use a spoon to spread evenly.
Crumble remaining oat mixture over the top. Sprinkle with more salt, if desired.
Freeze for 2 hours, then cut into pieces and store in an airtight container in the freezer.
Notes
There are a few substitutions that can be made with this recipe: cocoa powder can be replaced with cacao powder and pecans can be replaced with either almonds or walnuts. I do not recommend replacing the honey. I tested the recipe using maple syrup and the chocolate texture was not smooth.
