Salted Chocolate Oat Crumble Bars

These delicious bars are chewy, naturally-sweetened, perfectly salted, and has a smooth dark chocolate filling.

Ingredients
  • Oat Layer:
  • 4 Medjool dates, pitted
  • 1½ cup oats (rolled oats or instant oats)
  • 1½ cup pecans
  • ½ cup coconut oil, melted
  • 2 Tablespoons honey
  • ¼ cup almond butter
  • ¼ teaspoon sea salt
  • Chocolate Layer:
  • ¼ cup coconut oil, melted
  • ½ cup unsweetened cocoa powder
  • ¼ cup honey
  • sea salt
Instructions
  1. Line a loaf pan with parchment paper. Set aside.
  2. For the oat layer: Add all oat layer ingredients to a food processor.
  3. Pulse until crumbly texture, then blend until the texture holds together well. Scrape sides as needed.
  4. Set aside ½ cup of the oat mixture in a bowl.
  5. Evenly press remaining mixture into the lined loaf pan.
  6. For the chocolate layer: Melt coconut oil. Gently stir in cocoa powder and honey until smooth.
  7. Pour chocolate mixture into the loaf pan over the oat mixture. Use a spoon to spread evenly.
  8. Crumble remaining oat mixture over the top. Sprinkle with more salt, if desired.
  9. Freeze for 2 hours, then cut into pieces and store in an airtight container in the freezer.
Notes
There are a few substitutions that can be made with this recipe: cocoa powder can be replaced with cacao powder and pecans can be replaced with either almonds or walnuts.
I do not recommend replacing the honey. I tested the recipe using maple syrup and the chocolate texture was not smooth.
