Preheat oven to 250 degrees F. and place a parchment lined cookie sheet in the middle rack of the oven.
Cut 1½ apples into medium slices. Separately, cut ½ apple into very small pieces. In a medium-large bowl, toss apple slices in maple syrup and cinnamon.
In a medium saucepan, heat coconut oil over medium-low heat. Sautee apple slices until coconut oil starts to sizzle, then turn heat down to low and stir every 1-2 minutes until apples are cooked through. (It took me 15 minutes.) Remove from heat, cover and set aside.
Preheat waffle iron.
In a large bowl, whisk together dry ingredients.
In a small bowl, whisk egg. Add to batter.
Pour in wet ingredients and stir until combined.
In a small, heat-safe bowl, melt coconut oil in the microwave or the preheated oven. Pour into batter and stir well.
Fold in uncooked apple pieces.
Grease waffle iron generously with olive oil.
Pour ⅓ batter in at a time and cook as long as your waffle iron suggests (about 2-4 minutes.)
Once each waffle is done, place it on the cookie sheet in the oven.
Once all are cooked, re-heat sautéed apples over low-medium heat.
Serve warm with sautéed apples on top, maple syrup and pecans.
Notes
If your batter is too thick, add a bit of almond milk. To make your waffles sweeter, add another Tablespoon of maple syrup.
