Banana Nut Waffles

Serves: 5 waffles
- 1½ medium or 2 small ripe bananas, mashed
- 1½ cup whole wheat flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- ⅔ cup unsweetened almond milk
- 1 Tablespoon pure maple syrup (can add more)
- 1 teaspoon pure vanilla extract
- 1 large egg
- 2 Tablespoons coconut oil, melted
- ⅓ cup chopped nuts + more for topping (I used walnuts, pecans and peanuts.)
- Preheat oven to 250 degrees F.
- Preheat waffle iron.
- In a large bowl, whisk dry ingredients,
- Pour in wet ingredients and stir until smooth.
- In a small bowl, whisk egg. Add to batter and stir until fully-incorporated,
- Melt coconut oil in the microwave or preheated oven. Pour into batter and mix well.
- Fold in chopped nuts.
- Grease pre-heated waffle iron with olive oil or non-stick spray.
- Pour ⅕ batter in at a time (about ½ heaping cup) and cook as long as your waffle iron suggests (about 2-4 minutes.)
- Once waffle is done, place on cookie sheet and keep warm in the oven. Repeat with each waffle,
- Serve warm with maple syrup, sliced bananas and nuts.
