Banana Nut Waffles

Serves: 5 waffles
Ingredients
  • 1½ medium or 2 small ripe bananas, mashed
  • 1½ cup whole wheat flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ⅔ cup unsweetened almond milk
  • 1 Tablespoon pure maple syrup (can add more)
  • 1 teaspoon pure vanilla extract
  • 1 large egg
  • 2 Tablespoons coconut oil, melted
  • ⅓ cup chopped nuts + more for topping (I used walnuts, pecans and peanuts.)
Instructions
  1. Preheat oven to 250 degrees F.
  2. Preheat waffle iron.
  3. In a large bowl, whisk dry ingredients,
  4. Pour in wet ingredients and stir until smooth.
  5. In a small bowl, whisk egg. Add to batter and stir until fully-incorporated,
  6. Melt coconut oil in the microwave or preheated oven. Pour into batter and mix well.
  7. Fold in chopped nuts.
  8. Grease pre-heated waffle iron with olive oil or non-stick spray.
  9. Pour ⅕ batter in at a time (about ½ heaping cup) and cook as long as your waffle iron suggests (about 2-4 minutes.)
  10. Once waffle is done, place on cookie sheet and keep warm in the oven. Repeat with each waffle,
  11. Serve warm with maple syrup, sliced bananas and nuts.
