Chocolate Syrup: ¼-1/3 cup finely chopped dark chocolate
2 teaspoons coconut oil
2 Tablespoons pure maple syrup
Instructions
Preheat oven to 200 degrees F. and line a baking sheet with parchment paper. Set aside. (If you want to serve all waffles at the same time)
Preheat your waffle iron.
In a large mixing bowl, lightly beat eggs.
Add almond milk, vanilla, Greek yogurt and maple syrup to bowl and stir to combine.
Stir in whole wheat flour.
Stir in coconut sugar, baking powder, baking soda and salt.
Spray top and bottom of waffle iron with olive oil or non-stick spray.
Scoop heaping ½ cup-2/3 cup batter into waffle iron. Close top and cook according to your waffle iron's instructions.
To keep warm, as waffles are done, place on lined baking sheet in the oven.
Prepare chocolate syrup by combining chopped chocolate and coconut oil in a medium heat-safe bowl and microwave for 30-second intervals, stirring between each time until melted. Once melted, stir in maple syrup.
Scoop ice cream into center of each waffle.
Drizzle chocolate syrup on top. Sprinkle slivered almonds on top.
Serve right away.
