Easy Oatmeal Pancakes

Serves: 6 medium pancakes
- ½ cup rolled oats or quick oats
- ½ cup + 2 Tablespoons whole wheat flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 large egg, lightly beaten
- 1 Tablespoon pure maple syrup + more for serving
- 1 teaspoon pure vanilla extract
- 1 Tablespoon coconut oil, melted
- 1 Tablespoon applesauce (or substitute coconut oil)
- ⅔ cup unsweetened vanilla almond milk
- In a large mixing bowl, combine all dry ingredients.
- In a medium bowl, whisk egg. Add maple syrup, vanilla, melted coconut oil and applesauce and stir to combine.
- Add almond milk and stir until combined.
- Heat coconut oil, olive oil or non-stick spray in a medium pan or griddle over medium heat.
- Once oil is hot, lower heat to medium-low and scoop ¼ cup batter into pan.
- Cook until bubbles form, then flip and cook until other side is firm.
- Repeat with remaining batter.
- Serve warm with pure maple syrup.
