Coconut Dark Chocolate Popcorn

Ingredients
  • ⅓ cup shredded coconut
  • 1 Tablespoon olive oil
  • ⅓ cup popcorn kernels
  • 1 teaspoon coconut oil, melted
  • 1½ ounces dark chocolate, chopped
  • ½ teaspoon sea salt
Instructions
  1. Preheat oven to 300 degrees F and line a cookie sheet with parchment paper.
  2. Spread coconut on lined cookie sheet and bake for 8 minutes.
  3. In a medium pot, heat olive oil with 2-3 popcorn kernels over medium-high heat.
  4. Once popcorn pops, pour the rest of the popcorn in the pot. Cover and continue to cook. Once popping slows, shake the pot and remove from heat. Transfer popcorn to a large bowl.
  5. In a small heat-safe bowl, melt coconut oil with chopped dark chocolate in the microwave of oven. Stir to combine.
  6. Drizzle melted chocolate on top of the popcorn and sprinkle toasted coconut and sea salt on top.
  7. Chill in the refrigerator until chocolate hardens. To harden faster, chill in the freezer for a few minutes.
