Chunky Monkey Waffles

Serves: 4-5 waffles
- 1 cup all purpose or whole wheat flour (If using whole wheat, stone ground works best.)
- ¾ teaspoon baking powder
- ¼ teaspoon salt
- 1½ small very ripe bananas, mashed
- 1 large egg
- 2-3 Tablespoons pure maple syrup
- 1 cup unsweetened almond milk (or milk of choice)
- ½ teaspoon vanilla extract
- ⅓ cup creamy natural peanut butter
- 3 Tablespoons walnuts, chopped
- 1 ounce dark chocolate, chopped or broken into small pieces
- additional toppings: maple syrup, peanut butter, banana slices
- Pre-heat your waffle iron.
- In a large mixing bowl, combine flour, baking powder and salt.
- In a medium bowl, mash bananas.
- Add egg and whisk.
- Add egg mixture to dry ingredients and stir to combine.
- Add almond milk, vanilla and peanut butter. Stir to combine.
- Chop walnuts and chocolate.
- Add to batter and stir.
- Grease waffle iron with olive oil or non-stick spray.
- Scoop a heaping ⅓ cup or ½ cup batter into center of waffle iron.
- Cook according to your waffle maker's instructions.
- Serve warm with additional toppings.
* You may need a bit more milk if batter seems too thick.
