Healthy Caramel Apples (3 ways!)

Serves: 6 caramel apples
Ingredients
  • 6 medium apples (Granny Smith and Honeycrisp work best)
  • 6 small/medium sticks or caramel apple skewers
  • ¾ cup pitted dates
  • ¼ cup pure maple syrup
  • ¼ cup coconut oil, melted
  • 2 Tablespoons water
  • ½ teaspoon sea salt
  • FOR SNICKERS APPLES:
  • ⅔ cup chopped dark chocolate
  • 1 Tablespoon coconut oil
  • ¼ cup peanuts, halves or chopped
  • FOR PEANUT BUTTER RAISIN:
  • ⅓ cup creamy natural peanut butter
  • 1 teaspoon coconut oil
  • ¼-1/3 cup unsweetened raisins
  • FOR DARK CHOCOLATE PECAN:
  • ⅔ cup chopped dark chocolate
  • 1 Tablespoon coconut oil
  • ⅓-1/2 cup pecans, chopped
Instructions
  1. Rinse and thoroughly dry apples.
  2. Remove stems from each apple and puncture the hole where the stem was with your choice of stick. Make sure you put the stick in far enough to hold it by the stick without the apple falling off.
  3. Set each apple on a parchment lined surface.
  4. Blend dates in food processor until caramel ball forms.
  5. Add maple syrup, melted coconut oil, water and sea salt. Blend until smooth, scraping sides as needed.
  6. Transfer caramel to medium bowl.
  7. Dip each apple in caramel and set them on parchment paper.
  8. To make snickers apples, melt chocolate and coconut oil together in microwave. Use spoon to drizzle desired amount of chocolate on each apple. Sprinkle peanuts on top and stick to sides of each apple.
  9. To make peanut butter raisin apples, melt peanut butter with coconut oil in microwave for a few seconds (just enough to melt the peanut butter.) Use a spoon to drizzle melted peanut butter evenly on top of each apple. Sprinkle raising on top of each apple and stick to sides.
  10. To make dark chocolate pecan apples, melt chocolate and coconut oil together in microwave. Use spoon to drizzle desired amount of chocolate on each apple. Sprinkle chopped pecans on top and stick to sides of each apple.
  11. Once you've prepared your apples, place apples in refrigerator for 15-25 minutes, or until chocolate completely hardens and caramel hardens slightly.
  12. Eat apples off of stick or cut into slices. (I found it easier to eat in slices, but both work.)
  13. To store apples, place in refrigerator (no need to cover) for up to 2 days. Another option is to slice each apple and store in airtight container for up to 3 days.
