Healthy Chocolate Chip Cookie Dough Bars

It’s been what? A few months since I’ve posted? Something like that. I can’t believe it’s been that long. Time really got away from me. I’m happy to be back. I’m really challenging myself to start posting again and re-inspire myself. 

It has been so long since I’ve been inspired to post anything. I know there were a lot of factors, but basically life just got in the way. I spent a lot of time focusing on school, life shifts, and planning for the future. I put the blog and social media lower and lower on my to-do list. I’m finally getting to it. 

Obviously a lot has happened since the last time I posted. I’ll start by updating you on my photography. I created my first ever photography series. It’s up on my photography Instagram (@ellasmithphotography) and will be up on my website www.ellasmithphotography.com very soon! 

I must have created this recipe two summer’s ago. There are a few recipes I just never got around to posting. This is a really special one. I actually think of all the recipes I’ve ever created, this one I was most proud of.  

These bars are

Soft & chewy
Surprisingly healthy
& So bomb!

Since I’ve been having technical difficulties with my recipe plugin, I will temporarily be typing the recipes into posts. 

Healthy Chocolate Chip Cookie Dough Bars

Ingredients

2 cups oat flour
1/2 cup unsweetened almond milk
1/2 teaspoon vanilla extract
1/2 cup coconut sugar
1 cup almond flour
1 Tablespoon coconut oil
2 Tablespoons almond butter or cashew butter
2/3 cup dark chocolate chips

Directions

1. Line an 8×8 pan with parchment paper. Set aside.

2. In a food processor, combine all ingredients except chocolate chips.

3. Pulse and blend until combined. (Scrape sides as needed.)

4. Transfer cookie dough to pan. Press into pan evenly.

5. Refrigerate at least 20 minutes.

6. Cut into 12 squares. Store in an air-tight bag or container.
