These cookie dough bites have been a lifesaver for me this summer.
I haven’t been eating many large meals lately. My appetite has been a bit different since I became vegan. Surprise! From now on, I will not be eating any animal products.
I find that snacking is very important for vegans. It can be a struggle to find healthy vegan options when going out to eat. It is essential to keep snacks with you everywhere you go to avoid being stuck somewhere with nothing to eat.
These bites are my all time favorite! I love cookie dough so much. The best thing about these is that they’re free of refined sugar and dairy, making them delicious AND nutritious. Win win. Whether you’re vegan or not, I highly recommend these.
- 10 dates, pitted
- ¾ cup rolled oats
- ¾ cup almond flour
- 1 teaspoon vanilla extract
- ½ cup almond butter
- ⅓ cup dark chocolate chips
- Pulse dates and rolled oats together in a food processor until oats are broken down.
- Add almond flour, vanilla, and almond butter.
- Blend until thoroughly mixed together.
- Add chocolate chips and pulse a few times.
- Roll into 1-inch balls.
- Store in an air-tight container in the refrigerator.
