Sweet potatoes are definitely my favorite vegetable. You can use them for pretty much anything: breakfast, lunch, dinner or dessert. I can’t wait to come up with new creative ways to use it. Healthy Sweet Potato Pecan Casserole

This amazing recipe is vegan, family-friendly and perfect for Thanksgiving!
Ingredients
  • 4 medium-large sweet potatoes
  • ¼ cup unsweetened vanilla almond milk
  • 1½ Tablespoons coconut oil, melted
  • 2 Tablespoons pure maple syrup
  • 1 Tablespoon coconut sugar
  • ½ teaspoon ground cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon salt

  • TOPPING
  • ¾ cup pecans, chopped
  • 1 Tablespoon pure maple syrup
  • 2 teaspoons coconut oil, melted
  • 1 Tablespoon coconut sugar
  • ½ teaspoon cinnamon
Instructions
  1. Preheat oven to 350 degrees F.
  2. Bring a large pot of water to boil.
  3. Meanwhile, cut sweet potatoes into roughly 1-inch cubes.
  4. Boil sweet potatoes until easily pierced by large fork. (about 10 minutes)
  5. Drain well and let sit in strainer a few minutes to get all water out.
  6. Either blend sweet potatoes in food processor, Vitamix blender or hand mixer.
  7. Blend with remaining ingredients. (not topping ingredients)
  8. Transfer to large casserole dish.
  9. Chop pecans and toss with remaining ingredients.
  10. Evenly distribute topping on top of sweet potatoes.
  11. Bake 15-20 minutes, or until golden on top.
  12. Let sit at room temperature, covered with tin foil or towel until ready to serve. Then, preheat oven to 200 degrees and bake until hot.
