Sweet potatoes are definitely my favorite vegetable. You can use them for pretty much anything: breakfast, lunch, dinner or dessert. I can’t wait to come up with new creative ways to use it. Healthy Sweet Potato Pecan Casserole

This amazing recipe is vegan, family-friendly and perfect for Thanksgiving!
Ingredients
- 4 medium-large sweet potatoes
- ¼ cup unsweetened vanilla almond milk
- 1½ Tablespoons coconut oil, melted
- 2 Tablespoons pure maple syrup
- 1 Tablespoon coconut sugar
- ½ teaspoon ground cinnamon
- ½ teaspoon nutmeg
- ¼ teaspoon salt
TOPPING- ¾ cup pecans, chopped
- 1 Tablespoon pure maple syrup
- 2 teaspoons coconut oil, melted
- 1 Tablespoon coconut sugar
- ½ teaspoon cinnamon
Instructions
- Preheat oven to 350 degrees F.
- Bring a large pot of water to boil.
- Meanwhile, cut sweet potatoes into roughly 1-inch cubes.
- Boil sweet potatoes until easily pierced by large fork. (about 10 minutes)
- Drain well and let sit in strainer a few minutes to get all water out.
- Either blend sweet potatoes in food processor, Vitamix blender or hand mixer.
- Blend with remaining ingredients. (not topping ingredients)
- Transfer to large casserole dish.
- Chop pecans and toss with remaining ingredients.
- Evenly distribute topping on top of sweet potatoes.
- Bake 15-20 minutes, or until golden on top.
- Let sit at room temperature, covered with tin foil or towel until ready to serve. Then, preheat oven to 200 degrees and bake until hot.
