My apologies for not posting earlier, but it’s been a hectic few weeks. My first year of college is officially over and easing back into my normal life is now my top priority.
The best thing about being back home is the access to a kitchen. Boy did I miss being able to cook anything whenever I want. It really is a treat.
It’s such a relief not having to eat crummy cafeteria food anymore. I missed fresh eggs from our chickens and homemade basil pesto. I still enjoy a fresh fruit smoothie, now that I’m back. I plan to create tons of beautiful content for the @wakeuptowaffles Instagram, so get ready for that. In the meantime, here’s a delicious smoothie recipe, perfect for the hot days to come.
This smoothie is
super creamy
naturally-sweetened
dairy-free
sooo yummy!
- ½ cup mashed sweet potato (boiled or microwaved)
- 3 Tablespoons natural creamy peanut butter, divided
- 1 frozen banana, sliced
- 1 Tablespoon pure maple syrup
- 1 cup unsweetened vanilla almond milk
- Prepare sweet potato beforehand.
- Combine all ingredients, except 1 Tablespoon of peanut butter in blender.
- Blend on high until smooth.
- Pour into glass and serve right away. Top with remaining peanut butter, if desired.
