It’s St. Patrick’s Day so I’m celebrating by eating a crap ton of green food. No shamrock shakes for me, though. I’m opting for a kickass super green smoothie bowl.

I’m proud of myself for eating much healthier this week, compared to last week. I’m lucky to have such incredible friends that are willing to work out with me and keep me working towards my  goals.

My intentions to slowly transition into veganism have been failing, if I’m being completely honest. My downfall is feta cheese. No matter how hard I try, I can’t seem to escape it. Ha!

Usually my smoothie game is so strong, but dang, I’ve been lacking lately. A month ago, I was making smoothies every morning. I guess I’m just lazy because I don’t feel like going grocery shopping every week. The campus store can only provide so much. Fresh produce is not something they have.

Spirulina Smoothie Bowls

Serves: 1 smoothie bowl
 
Ingredients
  • 1 frozen banana
  • 1 cup orange juice
  • 1 Tablespoon chia seeds
  • 1 teaspoon spirulina powder
  • small handful greens (any dark leafy green works)
  • optional toppings: chia seeds, hemp seeds, cacao nibs, berries, sliced banana, walnuts, granola, kiwi
Instructions
  1. Add all ingredients to a high speed blender.
  2. Blend on high until smooth.
  3. Pour into a bowl and add toppings.
