Loaded Sweet Potato Fries

Baked sweet potato fries are just about my favorite meal. I spent so much time trying to come up with ideas for how to create some variety with this meal. Don’t get me wrong, I’m all for simply dipping sweet potato fries in mashed avocado, but this just takes it to the next level.

The real magic of these fries is the feta cheese. Definitely play with the recipe and adjust the ingredients as you please. Sometimes I add hemp seeds to a dish like this, or freshly sliced basil. You really can’t go wrong.

My post for crispy baked sweet potato fries was a huge hit last year and this is a variation on that recipe. There are tons of great ideas on the internet for how to make loaded sweet potato fries, but this one is really quite simple and delicious. I used to make this at least 3 times a week last summer and it was amazing,

These fries make the perfect Netflix watching dish. Plus, it’s a fun dish to make with the family and have each person choose their toppings. 

Loaded Sweet Potato Fries

These fries make the perfect Netflix watching dish. Plus, it's a fun dish to make with the family and have each person choose their toppings. 
Ingredients
  • 1 large sweet potato (or 2 medium sweet potatoes)
  • cool water (for soaking)
  • 2 Tablespoons garlic powder
  • 1 avocado, mashed
  • 1 tsp freshly squeezed lime juice
  • 1 small tomato, diced
  • 1 Tablespoon thinly sliced green onion
  • 2 Tablespoons feta cheese
  • salt and pepper to taste
Instructions
  1. Rinse and cut sweet potato in half (the short way, leaving 2 potato ends).
  2. Slice each half the long way into thin straws (as pictured above).
  3. Fill a large mixing bowl with cool water and soak fries for 1 hour.
  4. Preheat oven to 425 degrees F. and line a baking sheet with parchment paper.
  5. Place soaked fries on a clean napkin or a few sheets of paper towel and press dry.
  6. Place dry fries on the lined baking sheet with space in between each one. (Not much space is needed). Sprinkle with garlic powder.
  7. Bake fries for 20 minutes.
  8. Flip each fry and bake another 13-17 minutes, depending on how crispy you want your fries.
  9. Meanwhile, in a small mixing bowl, mash avocado. Add lime juice and stir.
  10. Dice tomato and add to avocado. Add salt as needed.
  11. Thinly slice green onion and sprinkle on top.
  12. Place sweet potato fries on a dish (or in a bowl) and load guacamole on top. Sprinkle feta cheese on top and serve right away!
