I am so sorry that my site has been down for the past week. There were issues with my code and it took a few days for me to notice. Thankfully the problem is fixed and we are back on track.
To make up for the fact that I am a bit late to post this, I am giving you a fantastic recipe! These pancakes are a life-saver for those of you dairy-free readers who struggle to get enough protein into your diet.
I know I struggle when it comes to protein. I love protein powders, but I have issues with so many of them. They either taste awful, or they have dairy in them. Not much to choose from. This recipe is great because I found a way to use a vegan protein powder that on its own frankly doesn’t taste all that great, but when combined with other ingredients tastes amazing and provides all the protein you need.
I discovered hemp protein during my first year of college. I ordered it from Thrive Market and started putting it in my smoothies. Honestly, I wasn’t a big fan. I much preferred other protein powders for smoothies. I hated that I didn’t have a use for this protein powder that I ordered, so I came up with this recipe.
These pancakes are
protein-packed
fluffy
sweetened just the right amount
- ½ cup almond milk
- 1 and ½ Tablespoons ground flaxseed
- 1 Tablespoon pure maple syrup
- ¼ cup hemp protein powder
- ¼ cup oat flour
- ¼ teaspoon baking powder
- pinch of salt
- 1 Tablespoon coconut oil, melted
- In a medium mixing bowl, whisk together almond milk, flaxseed, and maple syrup.
- Stir in protein powder.
- stir in oat flour, baking powder, and salt, until there are no clumps.
- Melt coconut oil in the microwave or on the stovetop.
- Pour coconut oil into batter.
- Heat some oil in a medium pan over medium-low heat.
- Pour ¼-1/3 cup batter into pan.
- When bubbles start to form in the center of the batter, flip pancake.
- Once other side is cooked through (should only take 20-30 seconds) then the pancake is ready. Add to a plate.
- Repeat with remaining batter.
- Serve with desired toppings. (I like to eat these with melted dark chocolate and fruit.)
